MAKES 4 PORTIONS
- 1 gelatin sheet
- 2 egg whites
- ½ cup (100 g) sugar
- The juice of 3 limes
- 3½ cups (200 g) lightly whipped cream
Lime zest to garnish Soak gelatin in plenty of cold water.
While stirring, warm the egg whites and sugar in a warm water bath, until it reaches a temperature of around 120 °F (50 °C).
Using an electric whisk, mix until cool and add lime juice.
Remove excess water from the gelatin, melt in a microwave oven, and mix melted gelatin with the meringue.
Gently fold in the cream.
Pipe into cylinders or serving glasses and let freeze for a few hours before serving.
Garnish with lime zest.
