Papayas should be golden, soft, and fragrant. Remember: The sweeter the fruit smells before you peel it, the sweeter it will taste.
- 1 medium, ripe papaya, peeled and seeded
- ¾ cup peach nectar
- Juice of 1 lime (about 2 tablespoons)
- 1 cup ice
Combine all the ingredients in a blender. Blend on high for 20 seconds, or until the drink is completely smooth.
GREEN PAPAYA SMOOTHIE Omit the peach nectar. Add ¾ cup white grape juice and 1 peeled, sliced kiwi before blending.
LATIN AMERICAN SMOOTHIE Omit the peach nectar. Add ¾ cup guanabana nectar before blending. Guanabana nectar is available in most Latin markets or by mail from Central Market (800-360-2552).
PACIFIC RIM SMOOTHIE Omit the peach nectar. Add ¾ cup white grape juice and 6 drained canned lychees before blending.
PAPAYA RAIN FOREST SMOOTHIE Add 2 tablespoons toasted cashew nuts, 2 tablespoons unsweetened coconut milk, and 3 tablespoons grenadine syrup before blending.
PAPAYA TAMARIND SMOOTHIE Omit the peach nectar. Add ¾ cup tamarind nectar before blending.
