MAKES ABOUT 6 SMALL PORTIONS
- ¼ cup (50 g) sugar
- ½ cup (100 g) water
- Juice of 4 ripe lemons
6 serving glasses, pre-chilled in the freezer Bring the sugar and water to a boil, then allow to cool.
Add the lemon juice and mix thoroughly. Pour the mixture into a clean pan or bowl and freeze for 4 hours. Scrape off layers of the frozen granita using a fork to create a granular texture.
Divide into pre-chilled glasses and serve immediately.
